Pizza is the most favourite and so perfect for Friday nights. Although pizza dough is loved, this time, think of a different style with sweet potato or yam (optional).

Hence, a sweet potato pizza base recipe.

It’s so good that even my kids love it. They sometimes like to take it for their school lunch boxes.

Health benefits of sweet potatoes

It’s a great source of fibre along with vitamins and minerals. Sweet potatoes enhance brain function and boost immunity. It’s a rich source of antioxidants and has cancer-fighting properties.

Ingredients

Sweet potato/(or Yam)

Egg

Shredded chicken

Beef

Carrot

Tomato

Green pepper

Scotch bonnet

Red pepper

Onion

Garlic paste

Ginger paste

Black pepper

White pepper

Mix seasoning

Salt

Vegetable oil

Cabbage to sprinkle on  

Cooking Instructions

Once you whisk the dry ingredients together, add half of them to the Sweet Potatoes and mix with a fork. Then, add the remainder of the dry ingredients and use your hand to knead everything together. The dough should be pretty moist but should not stick to your clean hand once finished.

Then, we’ll roll the dough out between two sheets of Parchment Paper to prevent sticking – peel the top layer back, but save it for later! Pop the Pizza Crust in the oven for 10 minutes, flip it onto the other sheet of parchment paper, and then add any and every topping that your little heart desires. No need to skimp here – this crust isn’t going to fall apart, once you finish decking out your Pizza, return it to the oven for an additional 10-12 minutes, then serve and enjoy!

Peel sweet potatoes (or yam) cut into cubes, add some salt then cook and set aside

Cook your shredded chicken and beef and set aside

Divide your veggies into 2, take 1 and chop into cubes and the remaining 1 to slice

In a pan add some veg oil, then cook shredded chicken and beef, add curry, ginger and garlic paste, seasoning, black pepper, and white pepper, mix seasoning and your chop veggies, stir and fry for 3 minutes then pour in a bowl.

Crack your egg in and whisk then add in the sweet potato (or yam), seasoning and whisk gently.

In a pan add some oil, then pour your mixture, then add your slice of red pepper followed by tomatoes carrot, green pepper and onion.

Cover the pan and fry for 20-30 minutes on a low-heat flame. Serve with hot black tea or chilled juice.
